Crispy Coconut Oatmeal Chocolate Chip Cookies

Prep Time: 15min Preheat Oven: 350°F Cook Time: 14-16min
The Recipe:
1 cup virgin coconut oil
2/3 cup coconut sugar
1/2 cup brown sugar
2 eggs
1 1/2 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp salt
2 cups oats
1 3/4 cups chocolate chips
Cooking Instructions:
Cream together coconut oil and both sugars.
Add in eggs and vanilla.
Mix together flour, baking soda, and salt.
Then combine wet ingredients and dry ingredients until just combined. Be careful not to overmix because you still have to add in the oats and chocolate chips. I usually do this step by hand. Finally stir in the oatmeal and chocolate chips.
Roll into balls about the size of golf balls and space them out on your baking sheet (they will spread out a bit as they heat up) and bake for about 14-16min until they become a nice golden brown. These thin cookies will have a crispy exterior with a soft chewy middle.
Enjoy immediately or save them for later and enjoy as a dessert topping on your favorite flavor of ice cream or crumble on top of your morning yogurt.
