The Recipe:
1 cup unsalted butter
1/2 cup white sugar
2/3 cup brown sugar
2 eggs
1 cup vegetable oil
2 tsp vanilla
3 1/2 cups cake flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 cups (1 bag) chocolate chips
Cooking Instructions:
Cream together butter and both sugars.
Add in eggs, oil, and vanilla.
Mix together flour, baking soda, baking powder, and salt.
Combine wet ingredients and dry ingredients until just combined. Be careful not to overmix. I usually do this step by hand. Finally stir in the chocolate chips.
Scoop the batter onto a cookie sheet (I use a 3 Tbsp scooper). These cookies spread quite a bit, so I recommend spacing them far apart (I only bake 6 at a time on a cookie sheet). Bake for about 15-18min until they develop lightly golden edges. These cookies have a delightfully light and fluffy texture. Try not to eat the whole pile all at once. The trail of cookie crumbs may give you away.
