The Recipe:
1/2 cup unsalted butter
1/2 cup white sugar
2 eggs
3-4 ripe bananas
1 1/4 flour
1 tsp baking soda
1/2 tsp salt
1 cup (1/2 bag) chocolate chips
* To make it gluten free, use your favorite blend of gluten free flours. One of my favorite brands is Cup4Cup Gluten Free Flour.
Cooking Instructions:
Cream together butter and sugar.
Add lightly beaten eggs and mashed bananas. Personally, I like to leave a few chunks when I mash my bananas. I believe it keeps the bread more moist and plus, you get those little bursts of flavor when you take a bite of bread.
In a separate bowl, mix together flour, baking soda, salt and chocolate chips. Coating the chocolate chips in flour prevents them from sinking to the bottom of the batter.
Fold the dry ingredients into the wet ingredients until just combined.
Pour batter into a loaf pan. Bake for 45-60 minutes or the top is golden brown and a fork comes out clean. If you use mini loaf pans or muffin tins, bake for 35-40 minutes.
Enjoy warm with a nice piece of butter or chill and spread a thin layer of cream cheese on top.
