Chewy Oatmeal Chocolate Chip Cookies


Prep Time: 20min Preheat Oven: 325°F Cook Time: 12-15min

The Recipe:

1/2 cup butter

1/3 cup brown sugar

1/8 cup white sugar

1 egg

1 tsp vanilla

3/4 cups flour (gluten-free flour mix below)

1/2 tsp baking soda

1/4 tsp salt

1/4 tsp cinnamon

1 1/2 cups quick oats (gluten-free quick oats)

1/2 cup chocolate chips

Gluten-free Flour Mix:

1/3 cup oat flour

1/6 cup tapioca flour

1/6 cup arrowroot flour

1/8 cup coconut flour

Cooking Instructions:

In an electric mixer/ large bowl, cream together butter and sugar (beat on high with paddle attachment for a few min). Add in vanilla and egg and beat until completely combined.

In a separate bowl, mix together all dry ingredients (flour or gluten-free flour mix, baking soda, salt, cinnamon). Gently add this dry mixture to the wet ingredients. Slowly beat in the oats and chocolate chips until just combined.

Bake for 12-15 minutes depending on the size of your cookies. Enjoy immediately out of the oven or freeze for later.
